Mango Peach Salsa

Every so often I reach into my collection of pictures and recipes, aka my toolbox for a bit of motvation. The Mango Peach Salsa you see here  is the result of  one such foray. This is possibly the easisest recipe you will ever prepare. The sweetness of a sweet ripe mango and a plump juicy peach  combined with spicy cilantro and just a touch of salt to bring out the flavors. Keep reading for  the simple no- cook recipe.


1 medium firm, ripe mango 
1 large firm, ripe peach
1 – 2 sprigs of cilantro (if you like cilantro use 2 otherwise 1 is plenty to marry the flavors of the fruits)
½ teaspoon salt

Peel mango and cut as much fruit as you can away from the seed. In a glass or plastic bowl, cut into small pieces, Cut open peach and remove seed. Cut peach into small pieces. Chop cilantro into small bits. Add salt. Use a spoon to mix all ingredients thoroughly.  Marinade in refrigerator at least 1 hour before serving. Cover and refrigerate any unused portion for up to 3 days.

The sweetness of the fruit gives a perfect balance to spicy  chicken and fish dishes.
