Curry chicken is one of the most popular Caribbean dishes worldwide. Authentic Caribbean curries are made of spices that showcases the Indian and Asian influence on Caribbean cooking. The curries favored by most Caribbean cooks feature a blend of , cumin, coriander, turmeric, fennel and other spices. Curries can range from mild to very spicy. The preparation and serving styles for authentic curry chicken is quite similar throughout the Caribbean.
1 tsp oil
2 tsp curry
2 cloves garlic
1 med onion chopped
1 tsp salt
1 tsp black pepper
2 lb chicken cut into small pieces
½ C. water
1 sprig thyme
1 med potato cut into small cubes
Heat oil in skillet over medium heat. Add curry and stir until the oil is absorbed and curry begins to smoke. Add remaining seasoning and stir well. Add chicken. Stir until chicken is coated. Reduce heat to medium low, cover and let meat cook for 20 minutes. Add ½ cup of water, thyme and potatoes. Stir well. Cover and let cook an additional 10 – 15 minutes until gravy thickens.
