2 cups cooked white rice
15oz can Black beans, drained and rinsed
½ teaspoon salt
1 medium onion , finely chopped
1 small red bell pepper, finely chopped
¼ cup cilantro, finely chopped
1 small green bell pepper, finely chopped
¼ cup olive oil
Toss all ingredients together in a glass bowl and serve.
* Best served cold, this dish can be served immediately but it is best served after marinating for a few hours. Can be kept refrigerated up to 1 week
