Yuca con Cebolla

Yuca con Cebolla is a popular Cuban side dish; this recipe takes about 30 minutes to prepare and produces a rich creamy cassava (yuca) dish flavoured with garlic and onions that melts on your tongue. Serve this dish in place of mashed potatoes or any other creamy side dish.

Cassava/ Yuca is versatile a staple that is found in many Caribbean kitchens. It is used to make breads, pudding or cooked and served as a side dish.

1.5 pounds yucca/ cassava
1 medium onion, thinly sliced
3 cloves garlic, finely chopped
1 teaspoon salt
3 ounces butter
½ teaspoon black pepper (optional)

COOKING DIRECTIONS
Peel and cut up yucca.

Place in saucepan with boiling water. Cover and let cook over medium heat for 15 to 20 minutes, until tender.

Drain water  and add remaining ingredients. Reduce heat to medium low, stir and let it heat through; about 7 minutes.
