Steamed Fish Filet

This dish is a quick, delicious, healthy one- pot meal  is super easy to make make. It takes about  30 mintes to prepare from start to finish.  and can be eaten alone, with rice or with bread.

Steamed fish filet II

2 medium carrots, thinly sliced
¼ scotch bonnet pepper, optional
1 large onion, chopped
2 cloves garlic, chopped 
Fresh thyme
2 lbs tilapia filets, about 3 large pieces
1 teaspoon salt
1teaspoon black pepper
1 Tbsp butter or olive oil

In a large skillet or a Dutch pot melt butter over medium heat. Layer pan with  half of all ingredients, except the fish. Arrange fish filets on top. Sprinkle on remaining salt and black pepper. Arrange remaining vegetables on top. Cover pot with a secure lid and let it cook for 15 minutes. Remove cover and spoon gravy over top. If necessary add 12/ cup of water and cook uncovered for 5 minutes.  Eat alone or serve with rice or crusty bread like coco bread or hardough bread.
