Spicy Pork with Apple Gravy

2 pounds Pork loin, cubed
2 teaspoons salt
2 teaspoons black pepper
3 cloves garlic finely chopped
1 large onionchopped
1 teaspoon + ¼ cup sugar
1 large *crisp apple,
 cubed about 2 cups
1 large carrot, cut into small pieces
1 Habanero pepper, optional

1 Tablespoon vegetable oil
2 cups water

Mix pork with salt, black pepper and garlic. Let it sit while you prepare the remaining ingredients. Heat a large saucepan over medium- high heat for about 3 minutes. Add oil and heat an additional 2 minutes. Sprinkle in 1 tsp. of sugar let it heat until sugar begins to burn and bubbles begin to form. Pour in pork. Stir thoroughly. Cook uncovered for about 10 minutes until pork is fully browned. Add remaining ingredients cover securely, reduce heat to medium and cook for 30 minutes. Stir well. If needed cook uncovered for 5 to 7 minutes until gravy thickens and begins to caramelize.
