Banana Dumpling

Hands down, banana dumplings are my favourite variety of dumplings. If you love dumplings and green bananas this is one recipe you must try. I love banana dumplings with brown stewed fish or curried chicken but it goes well with any saucy meat dish. Banana dumplings are denser than flour or cornmeal dumplings so they take a bit longer to cook but they are worth every minute.
The recipe is below

Banan Dumpling and fish II

3 cups flour
2 medium green bananas, grated
1 teaspoon salt
3 Tablespoons cold water

Grated greeen banana   boiling water

In a saucepan bring 4 cups of water and 1 teaspoon salt to a boil while you make dumplings.

Combine all ingredients except water in a clean bowl. Use your hands to combine flour and bananas like shown. After mixture is no longer sticky, add water to mixture and knead for about 5 minutes to form dough. Mixture will feel dry at first but it will moisten as you continue to knead.  Knead dough until it is firm and pliable like shown. You can tear dough into 8 to 10 even pieces and knead each into round discs or you can place on a cutting board roll dough into a thick rope and slice with a sharp knife. Carefully place shaped dumplings into boiling water. let it boil for about 25 minutes until dumplings begin to float.
